Pasta Salad

This creamy pasta salad is a fresh, simple dish that’s easy to bring together with crisp vegetables and a flavorful homemade dressing. With celery, cucumber, and a bright, herby mayo base, it’s a go-to side that feels both familiar and refreshing.

Serves: 8 | Time: 30 minutes

Ingredients

  • 8 oz pasta

  • 2 celery stalks, diced

  • 1 medium cucumber, washed and quartered [1]

  • 1 container (10-11 oz) cherry tomatoes or grape tomatoes, washed and cut in half

  • 1 medium red bell pepper, diced

  • 1/4 red onion, diced

Creamy Dressing

  • 3/4 cup mayo

  • 1 Tbsp apple cider vinegar

  • 1 tsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp pure maple syrup

  • 1/2 tsp garlic powder

  • 1/2 tsp dried dill

  • 1/2 tsp dried parsley

  • Salt and pepper, to taste

Instructions

  1. Prep all vegetables to the specifications above.

  2. Cook the pasta.

    1. Boil noodles in salted water according to package instructions, about 7-10 minutes.

    2. Drain and set aside.

  3. Make the creamy dressing.

    1. In a small bowl or food processor, mix together mayo, apple cider vinegar, lemon juice, Dijon mustard, maple syrup, garlic powder, dill, parsley, salt, and pepper.

  4. In a large bowl, mix together vegetables, pasta, and dressing.

  5. Serve and enjoy!

Wheat-free: use gluten-free pastas [2] such as Banza or Barilla options
