Granola

This granola is the kind of simple, feel-good staple you’ll want to keep on hand all week. Made with cozy spices, crunchy seeds, and naturally sweetened with maple syrup, it comes together quickly and bakes up golden and toasty. Even better, it’s naturally free from the top nine allergens - so more people at your table can enjoy it without worry.

Serves: 20 | Time: 30 minutes

Ingredients

  • 2 cups gluten-free rolled oats [1]

  • 1 cup unsweetened coconut flakes, chopped

  • 3/4 cup dried cranberried

  • 1/4 cup pumpkin seeds

  • 2 Tbsp chia seeds

  • 1/2 tsp cinnamon

  • 1/2 tsp cardamom 

  • 1/4 cup coconut oil

  • 1/4 cup pure maple syrup

Instructions

  1. Preheat oven to 350°.

  2. Line a baking sheet with parchment paper or a silicone baking mat.

  3. In a large bowl, mix together dry ingredients - rolled oats, coconut, dried cranberries, pumpkin seeds, chia seeds, cinnamon, and cardamom.

  4. Add coconut oil and maple syrup. Mix well.

  5. Pour mixture onto prepared baking sheet in a single layer.

  6. Bake for 15 minutes, until browned and dried out.

  7. Cool on baking sheet.

  8. Serve and enjoy!

[1] Rolled oats are a high risk item for wheat cross- contamination. Check the label for gluten-free designation.
