Cilantro Lime Rice

Ingredients
2 cups chicken broth
1 tbsp olive oil
1/2 tsp salt
1 cup white rice (like jasmine or basmati)
Zest of 1 lime
1-2 Tbsp lime juice
1/3 cup fresh cilantro, finely chopped
Instructions
In a medium saucepan, add broth, olive oil, and salt. Bring to a boil.
Add the rice, reduce heat to a simmer, and cover.
Cook for 15 minutes or until the liquid is absorbed.
Remove from heat and let sit, covered, for 5 minutes.
Fluff with a fork.
Add zest, lime juice, and cilantro. Mix gently.
