Cilantro Lime Rice

Ingredients

  • 2 cups chicken broth

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1 cup white rice (like jasmine or basmati)

  • Zest of 1 lime

  • 1-2 Tbsp lime juice

  • 1/3 cup fresh cilantro, finely chopped

Instructions

  1. In a medium saucepan, add broth, olive oil, and salt. Bring to a boil.

  2. Add the rice, reduce heat to a simmer, and cover.

  3. Cook for 15 minutes or until the liquid is absorbed.

  4. Remove from heat and let sit, covered, for 5 minutes.

  5. Fluff with a fork.

  6. Add zest, lime juice, and cilantro. Mix gently.
