Greek Garbanzo Salad

This Green Garbanzo Salad is super easy to throw together and packed with fresh, bright flavors. Crunchy cucumbers, sweet tomatoes, salty feta, and briny olives make every bite delicious, and the chickpeas keep it filling. Toss it with your favorite Greek dressing, and you’ve got a quick lunch, side dish, or meal-prep favorite ready to go.

Serves: 6 | Time: 15 minutes

Ingredients

  • 1 can (15 oz) garbanzo beans (chickpeas), drained and rinsed [1]

  • 1 container (10-11 oz) cherry tomatoes or grape tomatoes, washed and cut in half

  • 1 medium cucumber, washed and quartered [2]

  • 1/4 red onion, diced

  • 1 container (5-6 oz) crumbled feta

  • 1/2 cup kalamata olives, pitted and halved

  • 1 cup Greek dressing [3]

Instructions

  1. Prep all ingredients to the specifications above, making each bite-size.

    2.    In a large bowl, mix together all ingredients. [4]

Milk-free: use vegan feta, such as Violife Just Like Feta

Notes

[1] Getting ‘no salt added’ garbanzo beans allows you more control on how much salt is in the dish

[2] Feel free to leave some or all the skin on – your preference!

[3] Make your own or use a pre-made, such as Ken’s Simply Vinaigrette Greek (contains milk)

[4] If making ahead, keep the dressing on the side until ready to serve
