Banana Bread

Banana bread is the ultimate comfort bake—warm, nostalgic, and perfect any time of day. Ingredients

  • Unsalted butter for greasing loaf pan

  • 1/4 cup buttermilk

  • 2 cups flour

  • 3/4 tsp baking soda

  • 1/4 tsp salt

  • 4 very ripe bananas

  • 1/2 cup unsalted butter, softened

  • 1/2 cup sugar

  • 1/3 cup packed brown sugar

  • 1 tsp vanilla

  • 3/4 cup walnuts, chopped

Instructions

  1. Preheat oven to 350°.

  2. Grease a loaf pan with butter.

  3. If making milk-free, make buttermilk [1]. Set aside.

  4. In a large bowl, mix together dry ingredients – flour, baking soda, and salt.

  5. In a medium bowl, mash bananas and butter with a fork.

    1. Add remaining wet ingredients - buttermilk, sugar, brown sugar, and vanilla. Mix well.

  6. Add medium bowl wet ingredients to the large bowl dry ingredients. Mix well.

  7. Add walnuts. Mix well.

  8. Pour batter into prepared loaf pan.

  9. Bake for 55-60 minutes. Use a toothpick to test when done (should come out clean).

  10. Cool in pan.

  11. Serve and enjoy!

Allergen Alterations

Milk-free: (1) use vegan butter, such as Violife Plant Butter Unsalted. (2) make your own buttermilk by combining 1/4 cup unsweetened alternative milk and 1 Tsp apple cider vinegar in a glass or small bowl

Tree nut-free: do not add walnuts

Wheat-free: use a wheat-free flour blend, such as Bob’s Red Mill Gluten Free 1 to 1 Baking Flour
