Lemon Bars

Lemon bars are a go-to for anyone who loves a dessert that's both tangy and sweet. They have a refreshing, bright flavor that’s perfect for those days when you want something light and satisfying. When bringing them to a get-together they are always a hit - just a few crumbs left on the plate.

Ingredients

Crust

Filling

  • 3/4 cup lemon juice (about 4 lemons)

  • Zest from 1 lemon (about 2 tsp)

  • 1 1/2 cup sugar

  • 1 1/4 cup coconut milk

  • 6 Tbsp corn starch

Instructions

  1. Preheat oven to 350°.

  2. Line an 8x8-inch square pan with parchment paper.

  3. Make the crust.

    1. In a medium bowl, mix together sugar, salt, vanilla, and melted butter.

    2. Add flour. Mix well.

    3. Transfer to prepared pan. Spread crust into an even layer,

    4. Bake for 15 minutes.

  4. Make the filling.

    1. In a medium saucepan, mix together lemon juice, zest, sugar, coconut milk, and corn starch.

    2. Place over medium heat. Stir consistently until the mixture thickens [1], about 5 minutes.

  5. Pour filling evenly over the crust.

  6. Bake for 15 minutes.

  7. Cool in pan on counter for 30 minutes.

  8. Cover and refrigerate for 1-2 hours, until set.

  9. When ready to eat, remove bars from pan and dust with powdered sugar. [2]

  10. Serve and enjoy!

Allergen Alterations

Milk-free: use vegan butter, such as Violife Plant Butter Unsalted

Wheat-free: use a wheat-free flour blend, such as Bob’s Red Mill Gluten Free 1 to 1 Baking Flour

Notes

[1] The mixture goes from liquid to thickened quickly, so keep a close eye on the mixture

[2] Powdered sugar will dissolve overtime, so best to add sugar when ready to eat
