Roasted Red Potatoes

Crispy on the outside, soft on the inside, and full of cozy flavor - these roasted red potatoes with rosemary and thyme are the ultimate easy comfort side. Just toss with oil and herbs, bake, and enjoy with nearly any main dish.

Serves: 6 | Time: 45 minutes

Ingredients

  • 1 1/4 lbs red potatoes, cubed

  • 2 Tbsp olive oil

  • 1 tsp dried rosemary

  • 1 tsp dried thyme

  • Salt & pepper, to taste

Instructions

  1. Preheat oven to 425°.

  2. In a medium bowl, toss prepared potatoes with olive oil, rosemary, thyme, salt, and pepper, until well-coated.

  3. On a lined baking sheet, spread out the potato mixture, leaving space between pieces to ensure even roasting.

  4. Bake for 35 minutes. [1]

  5. Serve and enjoy!

Notes

[1] Once in the oven, do not move or stir the potatoes, this will help them get crispy
