Lemon Asparagus
Fresh and uncomplicated, this lemon asparagus comes together in minutes and pairs well with almost any main. A light drizzle of olive oil and a hit of lemon make it a reliable, feel-good side dish.

Ingredients
Salt, for water
1 bunch asparagus, trimmed
1 Tbsp olive oil
2 tsp lemon juice
Salt, to taste
Lemon zest, to finish
Instructions
In a wide, shallow pot, bring salted water [1] to a boil.
In a large bowl, make an ice bath for the asparagus.
Add the asparagus and blanch until just tender and bright green, about 3 minutes.
Transfer to the ice bath to stop the cooking.
Transfer to a serving platter.
Drizzle with olive oil and lemon juice.
Sprinkle salt and lemon zest.
Serve and enjoy!

[1] Make sure there is enough water to submerge all the asparagus.
