Lemon Asparagus

Fresh and uncomplicated, this lemon asparagus comes together in minutes and pairs well with almost any main. A light drizzle of olive oil and a hit of lemon make it a reliable, feel-good side dish.

Serves: 6 | Time: 15 minutes

Ingredients

  • Salt, for water

  • 1 bunch asparagus, trimmed

  • 1 Tbsp olive oil

  • 2 tsp lemon juice

  • Salt, to taste

  • Lemon zest, to finish

Instructions

  1. In a wide, shallow pot, bring salted water [1] to a boil.

  2. In a large bowl, make an ice bath for the asparagus.

  3. Add the asparagus and blanch until just tender and bright green, about 3 minutes.

  4. Transfer to the ice bath to stop the cooking.

  5. Transfer to a serving platter.

  6. Drizzle with olive oil and lemon juice.

  7. Sprinkle salt and lemon zest.

  8. Serve and enjoy!

Notes

[1] Make sure there is enough water to submerge all the asparagus.
