Sausage, Potatoes & Colorful Veggie Bake

This chicken sausage, potatoes, and colorful veggie bake is a dependable dinner you’ll reach for again and again. Simple ingredients come together to create something that feels both comforting and fresh. It’s just as perfect for an easy weeknight meal as it is for weekly meal prep.

Ingredients

  • 1 lb fingerling or red potatoes, diced

  • 1 package (12 oz) chicken sausage links, such as Aidells Chicken & Apple Smoked Chicken Sausage, halved lengthwise, and sliced crosswise

  • 2 1/2 cups green beans, trimmed and cut

  • 1 head of broccoli, cut into florets with stem peeled and sliced

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1/4 cup olive oil

  • 2 Tbsp Italian seasoning

  • 1 tsp garlic powder

  • Salt and pepper, to taste

  • Optional: 1/2 - 1 tsp red pepper flakes

Instructions

  1. Preheat oven to 400°.

  2. Prep all produce to the specifications above.

  3. In a Dutch oven or lidded baking dish, add potatoes, sausage, green beans, broccoli, and bell peppers.

  4. Drizzle oil, Italian seasoning, garlic powder, salt, pepper, and red pepper flakes (if using) over the vegetables. Mix until coated.

  5. Bake for 40 minutes, stirring once.

  6. Let cool partially covered with lid for 10 minutes.

  7. Serve and enjoy!
