Coleslaw

Coleslaw is a crisp, refreshing staple that brings brightness and crunch to any table—especially at picnics, potlucks, or summer cookouts. Whether piled onto a sandwich or served as a cool side, it’s a crowd-pleaser that complements just about every dish it meets.

Serves: 12 | Time: 20 minutes

Ingredients

Salad

  • 1/2 head purple cabbage, shredded

  • 1 tsp salt

  • 3 medium carrots (about 1 1/2 cups), shredded

Dressing

  • 1/2 cup mayo

  • 1 Tbsp apple cider vinegar

  • 1 Tbsp Dijon mustard

  • 1/2 tsp celery seeds

  • 1/2 tsp honey

  • Salt and pepper, to taste

Instructions

  1. Prep the cabbage and carrots to the specifications above.

  2. Massage the cabbage.

    1. In a large bowl, add the cabbage and salt.

    2. Vigorously massage the cabbage with clean hands or gloves, repeatedly squeezing the cabbage until it softens and shrinks.

    3. Drain the liquid and set aside.

  3. Make the dressing.

    1. In a small bowl, mix together mayo, apple cider vinegar, Dijon mustard, celery seeds, honey, salt, and pepper.

    2. Taste and adjust salt and pepper, as needed. [1]

  4. Using the same large bowl (as step 2), toss prepared cabbage, carrots, and dressing.

  5. Serve and enjoy!

Notes

[1] If you prefer a sweeter dressing, add more honey.
