Sheet Pan Fajitas

These sheet pan fajitas are a simple, colorful way to make mealtime feel easy. Serve it in tacos, bowls, salads, or on its own so everyone can build what works for them. Make one batch or double it for easy meal prep or to feed a larger group.

Ingredients

  • 3 Tbsp olive oil

  • 1 Tbsp lime juice

  • 2 tsp chili powder

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp onion powder

  • 1/2 tsp pepper

  • 1 red bell pepper, julienned

  • 1 yellow bell pepper, julienned

  • 1 green bell pepper, julienned

  • 1/2 red onion, julienned

  • 1 lb chicken breast, cut into strips

Instructions

  1. Preheat oven to 425°.

  2. Line a baking sheet with aluminum foil, parchment paper or silicone baking mat.

  3. In a small bowl, mix together olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, onion powder, and pepper. Set aside.

  4. Prep all vegetables and chicken to the specifications above.

  5. In a large bowl, toss prepared vegetables and chicken with oil and spice mix, until well-coated.

  6. On the lined baking sheet, spread out the fajita mixture into an even layer.

  7. Bake for 20-25 minutes, until chicken is cooked.

  8. Serve and enjoy!
