Creamy Polenta
Creamy, comforting, and easy to make - this polenta can be used as a side or base. Its smooth texture and savory flavor makes it a versatile favorite for both everyday dinners and special occasions.

Ingredients
3 cups vegetable stock
1 cup canned coconut milk
1 tsp salt
1 cup cornmeal
1/4 cup butter
2 Tbsp nutritional yeast
1/2 tsp garlic powder
Instructions
In a medium saucepan, add vegetable stock, coconut milk, and salt. Bring to a boil.
Reduce heat to low-medium.
Add the cornmeal and whisk for about 5 minutes to avoid clumping.
Simmer for an additional 10 minutes, until thickened. Stir occasionally.
Remove from heat.
Add butter, nutritional yeast, and garlic powder. Mix well.
Serve and enjoy!
