Creamy Polenta

Creamy, comforting, and easy to make - this polenta can be used as a side or base. Its smooth texture and savory flavor makes it a versatile favorite for both everyday dinners and special occasions.

Ingredients

  • 3 cups vegetable stock

  • 1 cup canned coconut milk

  • 1 tsp salt

  • 1 cup cornmeal

  • 1/4 cup butter

  • 2 Tbsp nutritional yeast

  • 1/2 tsp garlic powder

Instructions

  1. In a medium saucepan, add vegetable stock, coconut milk, and salt. Bring to a boil.

  2. Reduce heat to low-medium.

  3. Add the cornmeal and whisk for about 5 minutes to avoid clumping.

  4. Simmer for an additional 10 minutes, until thickened. Stir occasionally.

  5. Remove from heat.

  6. Add butter, nutritional yeast, and garlic powder. Mix well.

  7. Serve and enjoy!
