Strawberry Spinach Salad

Ingredients

  • ½ cup pecans, chopped

  • 1 tsp olive oil

  • Salt, to taste

  • 1 container (5 oz) baby spinach

  • ½ lb (8 oz) strawberries, quartered

  • ¼ red onion, sliced

  • 4 oz crumbled goat cheese

  • ¼ cup balsamic vinaigrette [1]

Instructions

  1. Toast the pecans.

    1. Preheat oven to 350°.

    2. Line a half baking sheet with parchment paper or silicone baking mat.

    3. In a small bowl, toss the pecans with olive oil and a pinch of salt.

    4. Spread pecans into an even layer on the prepared baking sheet.

    5. Bake for 7-10 minutes, until fragrant.
