Strawberry Spinach Salad

Ingredients
½ cup pecans, chopped
1 tsp olive oil
Salt, to taste
1 container (5 oz) baby spinach
½ lb (8 oz) strawberries, quartered
¼ red onion, sliced
4 oz crumbled goat cheese
¼ cup balsamic vinaigrette [1]
Instructions
Toast the pecans.
Preheat oven to 350°.
Line a half baking sheet with parchment paper or silicone baking mat.
In a small bowl, toss the pecans with olive oil and a pinch of salt.
Spread pecans into an even layer on the prepared baking sheet.
Bake for 7-10 minutes, until fragrant.
In a large bowl, toss spinach, strawberries, red onion, goat cheese, toasted pecans, and vinaigrette. [2]
