Chicken and Bacon Ranch Salad

This hearty salad balances fresh, crisp textures with warm, savory toppings for a meal that feels both light and satisfying. Finished with a creamy drizzle, it’s a simple, satisfying option for lunch or dinner with plenty of texture in every bite.

Ingredients

Roasted Toppings

  • 1 can (15 oz) garbanzo beans (chickpeas), drained and rinsed [1]

  • 2 tsp olive oil

  • 4 strips of bacon

Chicken

  • 1 Tbsp olive oil

  • 1 chicken breast or 2 chicken thighs

  • 1 tsp garlic powder

  • Salt and pepper, to taste

Salad

  • 1 head (about 4 cups) romaine lettuce, chopped

  • 1 medium carrot (about 1/2 cup), shredded

  • 1/2 medium cucumber (about 1/2 cup), washed and quartered [2]

  • 1/8 red onion (about ¼ cup), diced

  • 1 avocado, diced

  • 1/3 cup ranch dressing [3]

Instructions

  1. Roast the bacon and garbanzo beans.

    1. Preheat oven to 400°.

    2. Line a baking sheet with foil, creating a barrier in the middle to contain bacon fat.

    3. In a small bowl, toss the garbanzo beans with olive oil.

    4. Spread garbanzo beans into an even layer on one half of the prepared baking sheet.

    5. Lay out bacon strips on the other half of the prepared baking sheet.

    6. Bake for 15 minutes, until crispy.

    7. Set aside.

  2. Cook the chicken.

    1. Heat oil in a medium fry pan on medium heat.

    2. Cut chicken into bite-size (about 1”x1”) chunks.

    3. Add chicken, garlic powder, salt, and pepper. Toss until chicken is well-coated and spread into an even layer.

    4. Cook for about 4 minutes per side.

    5. Remove chicken from pan. Set aside.

  3. Prep all produce to the specifications above.

  4. Chop the cooked bacon.

  5. Assemble the salads.

    1. Divide the romaine lettuce onto three plates or bowls.

    2. Top with garbanzo beans, bacon, chicken, carrots, cucumber, onion, and avocado.

    3. Drizzle with dressing.

  6. Serve and enjoy!
